Job Overview: Kitchen Supervisor

Xanterra Travel Collection® is seeking an energetic and organized Kitchen Supervisor for The Grand Hotel at the Grand Canyon (Tusayan, AZ). This is a unique opportunity to Live. Work. Explore. just one mile from the South Rim of the Grand Canyon. As a supervisor in the only 3-diamond hotel in the region, you will play a critical role in coordinating kitchen production, food safety, and staff training for the Canyon Star Steakhouse and Saloon.

This is a Full-Time, Year-Round position designed for a culinary leader who thrives in high-volume environments and is passionate about maintaining elite standards of food quality and hospitality.


Key Responsibilities & Culinary Leadership

Operational Oversight

  • Production Coordination: Assist in the daily organization of menu production, ensuring all dishes meet specific recipes and presentation standards.

  • Inventory & Ordering: Manage food ordering, receiving, and storage; oversee prep lists, labeling, and cooler organization to minimize waste.

  • Buffet Management: Lead the setup, maintenance, and breakdown of buffets according to strict timetables and fluctuating guest counts.

Compliance & Training

  • Public Health Vigilance: Maintain a positive relationship with the Coconino Public Health Department and strictly enforce HACCP food sanitation programs.

  • Staff Development: Conduct training classes for kitchen staff in all positions, focusing on upskilling team members for internal promotion.

  • Quality Assurance: Perform regular walk-throughs of the kitchen and dining areas to ensure consistency in food quality, presentation, and cleanliness.


Requirements & Qualifications

Mandatory Criteria

  • Age: Must be 18 years or older.

  • Experience: Minimum of two (2) years of supervisory or lead cook experience in a high-volume a la carte or institutional dining setting.

  • Technical Skills: Proven experience with food production records, employee scheduling, and inventory/cost controls.

Physical Demands

  • Stamina: Ability to stand and walk for extended periods; frequent kneeling, squatting, and bending.

  • Strength: Must lift up to 50 lbs frequently and up to 100 lbs occasionally; frequent pushing/pulling up to 25 lbs.

  • Pay Rate: $20.75 per hour.

  • Schedule: 40 hours per week (5 days), including weekends, evenings, and holidays.
