The Second Cook at the Residence Inn Calgary Downtown is a vital culinary professional responsible for executing high-quality food service in one of the largest Residence Inn properties globally. Located in the vibrant Beltline District, this role focuses on the precise preparation of dishes for both long-stay guests and large-scale conferences. Reporting to the Executive Chef, the Second Cook ensures that every plate adheres to Marriott’s strict food safety and presentation standards while maintaining an efficient, sanitary, and collaborative kitchen environment.

Core Responsibilities

Culinary Execution: Prepare all food items in a sanitary and timely manner, following specific recipes, portion controls, and garnish specifications.

Banquet & Event Support: Set up meeting break areas with lunches, coffee, or snacks according to Banquet Orders for the 10,000 sq. ft. Conference Centre.

Specialized Prep: Create modified dishes for guests with specific food allergies or dietary intolerances.

Inventory Management: Receive daily food shipments and store them correctly to ensure maximum freshness; track and report any food waste.

Sanitation & Safety: Adhere to a “clean as you go” policy; follow all company safety and security procedures, including the Emergency Response Plan.

Team Collaboration: Assist colleagues to foster a positive team spirit and achieve consistent guest care standards.
Candidate Requirements

Experience: 2–3 years of culinary experience in a similar-sized hotel or high-volume food establishment.

Education: Post-secondary culinary education from a reputable program is a strong asset.

Certification: Valid Food Safety Certification is mandatory.

Technical Skills: Proficiency in knife handling and the operation of various industrial cooking equipment.

Physical Demands: Ability to stand for extended periods and lift/carry objects up to 50 pounds without assistance.
